Millie,
There are way too many carbs in any candy bar.  Check the label.  There is also the danger that it can trigger sugar cravings.

Russell Stover makes a coconut chocolate bar that's good but has sugar alcohols so you need to be careful.

Of course you can have Almond Joy candy bars Millie, here's the FAT TO SKINNY recipe from Page 255 of the FAT TO SKINNY Sugar Free Bakery Book.



Ingredients

   4 squares unsweetened bakers chocolate
   ½ cup Xylitol or 24 drops of FAT TO SKINNY Zero Sweetener for sugar alcohol free candy
   ½ cup heavy whipping cream
   ½ cup unsweetened coconut
   Mini muffin pan and liners (makes 20)
Topping
   ¼ cup coconut to sprinkle on top or whole almonds for almond joys
 

Directions

1.   Line mini muffin pan with mini muffin liners.
2.   Melt 4 squares of unsweetened baker’s chocolate in a double boiler.
3.   Add sweetener, mix well.
4.   Add ½ cup heavy cream, mix well.
5.   Fold in ½ cup unsweetened coconut.
6.   Remove from heat fill up liners with chocolate mixture and sprinkle tops with coconut topping or set in a whole almond for Almond Joy Candy.
7.   Refrigerate for 2 hours.

 
 TIP– Leave in fridge and take out 15 minutes prior to eating. If chocolate gets too thick add hot water 2 tablespoons at a time mixing well in between until you reach desired consistency.

I made these yesterday, and we LOVED them!!! ;D ;D ;D

One word of caution... If you use Xylitol as your sweetener, try not to eat more than a couple!
My wife had four, and her tummy started having fits about 10 minutes after eating.
That's not unusual for sugar alcohols like Xylitol.
To avoid that problem, next time, I'll use FTS Zero instead! ;)

BTW... When done, unlike the picture, they look like dark chocolate candy.
I opted to put an almond on each one instead of more coconut. So yummy!!! :)

these do look good!  how many carbs are they? I have a question about xylitol. because I also have digestive issues with sugar alcohols. will stevia have the same effects? and could  I use it instead of xylitol in any recipe?  also, can the amounts of sugar in any recipe be decreased without losing to much flavor?

10 carbs for the whole batch.If sugar alcohols bother you use Fat to Skinny Zero,it has no sugar alcohols.  ;) You can also toast the coconut on these.Have you tried the peanut butter cups in the Bakery Book?

Liners at walmart today so I could make
Them but it was crazy busy there, I just
wanted to get out of there! The only things
I have made so far is the brownies, and Doug's
Best ever choc icecream and of course. The
OMM which we love the variety of that recipe.
The brownies are ok. The ice cream we threw
Away!  :-\. I'm now trying to focus on using my
Carbs on healthy choices. But I love the option
to have these dessert recipes to experiment with.
