Before you splash your lunchtime salad with low-fat dressing, know this: Your “healthy” dressing may be doing more harm than good, according to a new study published in Molecular Nutrition & Food Research.

Researchers at Purdue University served up veggie salads topped with various amounts and types of dressing: canola oil (monounsaturated fatty acids, or “MUFAs”), soybean oil (polyunsaturated fat), or butter (saturated fat). After eating, the 29 study participants had their blood checked for absorption of the carotenoids—antioxidants such as lutein, lycopene, and beta-carotene—that are found in veggies. These disease-fighting nutrients slash the risk of cancer and heart disease, safeguard bone density, prevent macular degeneration, and soak up damaging compounds.

Here’s what researchers found: The salads with the greatest amount of fat—20 grams—yielded the highest absorption of carotenoids.

MUFA-rich canola oil set the salad dressing gold standard with the best absorption rates of lutein and beta-carotene. Still, the researchers say, “The source of lipid had less impact on the absorption of carotenoids than amount of lipid.”

Bottom line: Fat-free salad dressings negate the whole point of eating a salad. “You need a little fat to absorb vitamins A, D, E, and K and other nutrients," says Katherine Tallmadge, RD, spokesperson for the American Dietetic Association. Plus, low-fat and fat-free dressings are often crammed with calories and sugar. So if you want the most out of your salad, ditch the diet dressing and reach for a healthy serving of old-fashioned fat.

Great info, Doug! :)

I knew that fat is vital to vitamin B absorption.
Without fat for it to bind with, it would all just pass through the system.
This is why I usually have cream cheese with GG Brancrisp just before I take my daily vitamins.

I did not know that this is also likely true with other important vitamins.
It's good to know!

Mouseissue, that could be why people on low fat diets get depressed. At least I was. Vitamin B is great for stress and depression. I can't get enough of the good fats these days.

Yea for Blue Cheese! Not only do I eat it as salad dressing (full fat kind, not that nasty low fat junk) I also buy the crumbles and I melt them on top of a burger. Mmmmmm....

I forgot about blue cheese and burgers! I know what I want for dinner! I love the turtle burgers too! :) Great kid food.

Hi Waterlilly! :)

I think depression is common in overweight people for a few reasons;

1) A bad self-image leads to poor self-esteem which can lead to depression.
2) Low fat diets leave people with low energy levels. This fuels depression.
3) The understandable difficulty most have sticking to a low fat diet can be depressing.
4) And finally, vitamin B deficiency will intensify feelings of depression.

Therefore, being overweight and trying to fix it with a low fat diet can easily bring on depression.

The opposite is true with the FTS lifestyle.
That's why there are so many happy and energetic folks around here! ;D

That's true. Also, the blood sugar roller coaster has many psychological affects that I think we sometimes don't realize. In fact, I KNOW my blood sugar goes like a roller coaster but yet I might not feel like it is dipping too low or high.  That must be why when I eat FTS, I feel weird because everything is steady and normal.

I've also heard stories of people who get rid of the carbs and get rid of the anxiety/stress. I'm hoping to do the same.
