Broccoli & Cheddar Soup
1 stick of butter
2 Cups shredded cheese(8 oz)
16 oz heavy cream
16 oz bag of broccoli (steamed in micro for 6-7 min) 10 carbs
Bacon crumbled

On medium heat Melt butter add cheese stiring  the whole time ,then add heavy cream stir until boiling then turn to simmer and stir until thickens .
Then add your broccoli .
When you serve but crumbled bacon on top.

I got 5 cup servings at  2 carbs per serving
If you wanted to count a little carbs for the heavy cream you could count it as 3 carbs per bowl just add you own carbs if needed .

I forget its reverse seasons in Australia Morgan! :D I actually enjoy dandelion greens  ;) You can enter your favorite veggie recipe :)

Kim's Crustless Zucchini Quiche

8 eggs
3 cups shredded cheese ~ I used sharp cheddar but anything would be good
1 cup heavy cream
salt and pepper ~ to taste
1/2  teaspoon nutmeg
1 cup tomatoes, red ripe
3 cups shredded zucchini ~ press out excess liquid
1/2 cup onion ~ thinly sliced
Splash of olive oil
parsley ~ optional
paprika ~ optional

Saute the zucchini and onion a bit in olive oil.  Mix together everything except 1 cup of cheese and the tomatoes.  Pour into a greased rectangular baking dish.  Slice the tomatoes thinly and layer over the top and then top that with the last 1 cup of cheese.  I like to sprinkle dried parsley & paprika on the top because it's pretty but you don't have to do this.
Bake at 350 or 375 until set which will be approximately 45 minutes.  12 servings at 2 net carbs per serving.

        This is a recipe I made up early in the season.  I call it cheesy tomato.  You take a firm green tomato, dice in chunks into a skillet of sausage drippings and fry until tender, seasoning with salt and pepper to taste.  After putting that in a bowl, take a slice of Kraft Deli Cheese and melt in the microwave 32 seconds or so and stir together.  I like to eat this as a side dish and replacement for macaroni and cheese.  Give it a try, it is really yummy!  :D

For a few months now I've been making what I call Guacamole Salad. I was craving guacamole and threw thus together instead of cooking a whole spread to have some guac with. I'm not a measuring kinda cook, so use these ingredients to your personal taste.

Layer salad stuff:

Romaine lettuce
Chopped tomato
Avocado chunks
jalapeno slices
red onion
Cucumber slices
Hard boiled egg

Dressing:

Juice of 1 lime with
2 parts Evoo
chopped cilantro
Crushed red pepper
minced garlic
Penzeys Arizona Dreaming seasoning or your favorite mix of southwestern type spices (cumin, chili powder, etc.) Or even a tsp of taco seasoning instead.

I briefly whizzed the dressing ingredients in the magic bullet, or you can use a whisk. This salad was so scrumptious. I often have it for breakfast.

Creamed Spinach

3 tbsp butter
2 pounds fresh spinach, rinsed
1 tbsp all-purpose flour
salt and pepper
1/2 cup cream


  Melt one tablespoon of butter over high heat in pan and add the spinach a handful at a time.  Saute a few minutes to wilt.  Stir in the flour and a pinch of salt anf pepper.  Saute for 2 to 3 more minutes and stir in the cream.  Bring mixture to a boil constantly stiring.  Reduce heat to low and simmer for half an hour.  Before serving stir in the remaining butter.  Can serve up to six people.  Makes an excellent side dish.

Sesame Broccoli
1 T sesame seeds
1/2 Cup chicken broth
1T soy sauce
1T sesame oil or (peanut,canola)
1 T peanut oil or canola oil
1 16 oz  bag of Broccoli florets
 (cook in micro for about 4-5 minuites still need to be firm drain and pat dry cut in small peeces if needed)
2-3 tsp garlic powder
1 T ginger

1.Toast sesame seeds in small non stick pan just until brown remove from pan and set aside
2.Mix broth ,soy sauce and sesame oil in bowl and set aside
3.Heat other 1 T of oilin a large covered pan on med heat add the broccoli stir so that broccoli is coated in oil . Saute for about 1 minuite
4.Make a circle in the middle of the pan of broccoli and add ginger and garlic and 1 tsp of oil if needed and saute and stir until they become fragrant then mix all together with the broccoli .
5.Add the chicken broth mixture that you had set aside earlier . Bring to a simmer reduce heat and cover . Cook for 2-3 minuites . Remove broccoli with slotted spoon from pan to a bowl , increase heat to high and boil down the liquid until just a couple Tablespoons remain. Turn off heat and broccoli and the toasted sesame seeds toss in the liquid and enjoy !!!!!!!
The whole recipe is 11 net carbs and very good

I tried this recipe today and just had to share it .  I thought it was perfect for the hot summer day and the tomatoes and cucumbers that I have been blessed with from the garden.

Quick Pickled Cucumber, Onion and Tomato Salad

2 cucumbers peeled and thinly sliced
1/2 large Vidalia onion
1 large tomato cored and coarsely chopped
Apple Cider Vinegar
1 T. celery seed
black pepper

In a medium bowl, combine the cucumbers and onion and sprinkle withe the vinegar and 3/4 tsp. of the salt.  Cover and let stand for thirty minutes.  In a seperate bowl, toss the tomato with the remaining 1/4 tsp of salt.  Add the tomato to the cucumber mixture.  Add the celery seed and pepper to taste and toss.  Adjust seasoning if desired.  Delish!
