Thank you all so much for all the great recipes!This was the best contest ever! After cooking lots of recipes.the winner is...................drum roll,,,,,,,,,,MOMMAB!! Her squash casserole is amazing! It is puffy,cheesy goodness! This is kid food too!I omitted the peppers to reduce the carb count.Really great recipe!! Congrats MOMMAB! Let me know where to send your prize! ;D

I omitted the green peppers too! <grin> Not a fan of green peppers or the added carbs! lol I had the last of the leftovers from the last batch tonight!!  ::)

You did it! ;D .   I am glad Squash won out.  I won second Place in Blumes 2000 for squash casserole....cornbread beat me... it was also a vegetable contest....Blumes is a Farmers Almanac  I got 5o bucks.  I am glad that you won MommaB!!!!

I am actually making this right now.  My garden is over flowing with Tomatoes and Eggplant,

2 good sized Eggplant pealed and sliced into 1 inch chunks
6-8 medium tomatoes diced (I leave the skin on)
2 medium pealed zucchini chopped
2 medium onions chopped
4 cloves garlic minced
1 tbsp. olive oil.
1/2 cup shredded parm. cheese

Place all ingredients in a baking dish and bake in oven at 350 for 1 1/2 hr, or until eggplant is tender. 
sprinkle cheese on top about 10 minutes before done. 

Use it as a sauce to cover spaghetti squash, or on it's own with meat.

Smells so good, and tastes even better!

A sprinkling of fresh ground nutmeg makes the squash casserole even tastier :)

Umpa, Joey is doing great!  He just returned home from his vacation with a friend and his family... Are you ready?  They eat FTS!  I cracked up when he came home and said that his friends mom had made a few of the things that I have made, and when he asked she said that she has been eating no carb and no sugar for a few months.  Joey told her about us, and she was excited to hear all about it.

He and I are back in full swing, and although our loss is not as fast as the last time, we are NOT giving up and we are working out at the gym.  School starts two weeks from today, I think Joe is a little worried about the lunch, but I told him "I got this"  Now I have to get it!

I tried the zucchini cakes - yummo.  I want to try the squash casserole, but before I do I want to check what you americans class as squash - here it is a little yellow button vegetable with bumps around it (reminds me a bit of a squashed star fish).  Is this the same vegetable?  What do you class as hard squash (never heard of it here)?  Also is pumpkin just pumpkin?  Thanks all

This is yellow squash also called crook neck  ;) Pumkin is pumkin.I make a great sweet potato pie at Thanksgiving with pumpkin ;) What you are talking about is PattyPan Squash its only 1 carb for 1/2 cup.
