Thanks again everyone!  Yes Umpa, am happier and thinner LOL.  Now I'm also not so camera shy.  A year ago was not real excited about being in front of camera unless I was behind a chair or someone else!  Golly Gee how FTS can change not only your physical outlook but your mental outlook.

Traveling mainstays were parmesan cheese crisps, chicken salad, soy bean salad, frosted cauliflower, salads, cheeses and meats. 

This is very inspiring to know that it CAN BE DONE on a long trip! I'm sure having your own home with you was a definite advantage, but I'm sure there are other ways to be successful, even in a hotel. Congratulations to you!!!

What's "frosted cauliflower"? I haven't been brave enough to try any cauliflower/carb substitutes.  I've never thought about soy bean salad. Interesting.

Hi Waterlily!  I've attached a link to where I originally posted the frosted cauliflower recipe.  We love it around our house.  I've even changed it up a little by adding brocoli once in a while or changing the cheese from cheddar to parmesan (whatever works LOL)
I have found that I like it best with the sour cream added.

Hi Waterlilly You are right having your own home with you sure helps a lot.  The Hubs and I just came back from a two week trip with our motor home and I had it packed full of meals that we could fix for ourselves.  Funny thing is we just got home yesterday and I have to unload most of those meals that I packed  :-\  Who would have thought with all the fun we were having I would be to tired to cook  ;D ;D ;D ;D   I haven't met a place yet that isn't willing to accommodate what I need.  Most of the time I don't even need to ask for anything different....just leave off this or that  ;)  I didn't lose anything but most important, I didn't gain anything either  :) Love is good  ;D

PS you should try the frosted cauliflower....It is soooooo good  ;)

Waterlily, yes you can use pre-chopped fresh or even frozen bagged cauliflower if you fix it like I did.

While I would never ride one myself (too scared  :o ) I just LOVE  ;D to see a woman on a bike. When I see her, I'm like "she's a badass" and "You go girl"!!!
