Low Carb Sweet Chicken Chili

Low Carb Sweet Chicken Chili


 
Servings- 4

Ingredients  

   2 cans black soy beans (7 net carbs)
   2 chicken breasts chopped into small bite size pieces
   2 slices thick bacon chopped fine
   1 small onion chopped (3 net carbs)
   1 teaspoon olive oil
   3 drops FAT TO SKINNY Zero Sweetener
   1 tablespoon chili powder
   1 tablespoon cumin
   1 teaspoon salt (more to taste)
   1 teaspoon cayenne pepper (optional heat)


Directions

1.   Place the drained and rinsed soy beans into  a saucepan with 2 cups of lightly salted water and bring to a boil.
2.   Once boiling reduce the heat to medium/low and cover.
3.   Heat the oil up in a medium sized non stick pot over medium heat and fry the bacon till almost crispy.
4.   Add the chicken chunks and brown all sides.
5.   Add the balance of the ingredients to the beans and mix well.
6.   Pour the beans and the liquid into the pot with the chicken and bacon.
7.   Bring to a boil then reduce to simmer.
8.   Cook uncovered until the chili is thickened to your liking.
9.   Adjust the salt and the heat by adding additional salt and spice if desired.
10.   Mix well and serve.


  TIP- Freezes well, make extra.
