I don't think I have posted this one yet.  

LOW CARB REUBEN CASSEROLE
2 lb deli corned beef -  sliced thin
2 bags  sauerkraut
1/2 pound swiss cheese, slices
1/2 pint heavy whipping cream
2 large eggs

Mix together the 2 eggs, heavy whipping cream & sauerkraut.  In a 9x13 greased pan layer the chipped corned beef, sauerkraut mixture then top with swiss cheese.  Bake at 375 for about 30 mins or until hot & bubbly.  Can serve with a grainy or dijon mustard or a low carb Thousand Island Dressing ~ I like the dressing (I can post a dressing recipe if ya'll want ~ it's easy...) ~ NOTE:  this is really good scooped into a Joseph's Low Carb Pita but remember to add  2 carbs per 1/2 pita  :)

4 net carbs per serving if 8 servings ~ 5 net carbs if 6 servings ~

I just changed a couple things on the above recipe to make sense - I have to input some things oddly into my mastercook and I didn't proofread what it said.  :) All is good now

SEVEN LAYER SALAD
1 head iceberg lettuce, chopped
1 cup diced celery
1 cup green pepper, slices
1/2 cup red onion slices
2 cups chopped deli turkey, or ham
6 large eggs, hard-boiled, sliced
2 cups shredded brick cheese, I use sharp cheddar
1/2 cup homemade bacon bits
2 cups mayonnaise
Zero sweetener (to taste)
1/2 cup heavy cream

Layer everything in order given ~ mix the mayo, zero & heavy cream together and spread over the top of the salad then sprinkle with the bacon pieces.  REFRIGERATE OVERNIGHT.  For 12 servings = 3 net carbs

NOTE:  The options are endless.  It's pretty in a clear bowl but if you want to be able to cut serving portions to watch your carbs you can do it in a rectangular dish.  You could layer in black olives, small cuts of raw brocolli, cucumber, sliced tomatoes, etc.  Great for get togethers or to keep in the fridge for meals.

Me too  ;D  Great recipes Kim!  I've been trying to come up with new ideas for recipes I've just not had time to play in the kitchen much lately.  :(   I still have time so don't count me out yet  haha

BUFFALO CHICKEN DIP
2 ~ 10 oz cans chicken breast
16 ounces cream cheese
1/2 - 3/4 cup hot sauce
1 cup ranch salad dressing ~ use a low carb one
2 cups cheddar cheese, shredded

Drain chicken and put in medium saucepan.  Add hot sauce & cook on medium til heated through.  Add cream cheese & stir until well blended.  Add ranch dressing & mix.  Pour into crockpot and keep on low or warm during your party.  Serve with raw veggies or low carb crackers for dipping. 

2 net carbs for 15 servings.

I scanned your last recipe (BUFFALO CHICKEN DIP ) a bit too fast.
