As our week long Lobsterfest continues we started this morning with lobster omelet's. This breakfast protein carried me all day until about 4:30 pm. It was delicious. easy to make and very fulfilling.
Lobster Omelet
Ingredients
2 jumbo eggs
1 cup cooked lobster meat
2 tablespoons chopped green onion
1/2 cup shredded Jarlsburg cheese
2 teaspoons salted butter
fresh parsley
Directions
1- Beat the eggs
2- Melt the butter over medium heat in a non-stick skillet
3- Pour in the eggs and swirl them around, cover the pan
4- Gently warm the lobster meat in the microwave
5- When the eggs are almost set reduce the heat to low and put the rest of the ingredients (cheese first) except the parsley into the pan and cover
6- When the cheese melts fold the omelet over and serve
7- I always eat fresh parsley after seafood to freshen my mouth
