Umpa what would the carb count be on 1 pound of shredded Jicama? I need to know for a recipe Im converting....

Hi Beebs, I figured the carb counts by measurement not weight. You'll need to look in your carb counter book and get the per cup count then weigh it...let us know the results

I read 1.1 per ounce Beebs. Not counting the fiber it's very high in a jicama. One of those magic veggies that wont mess with my BG much.

              17.6 per pound I think the fiber is around 4.5 per ounce

1 pound shredded jicama 17.6?
1/c melted butter
1/4 cup chopped onion 2.5?
1 pint sour cream 30?
8 ounce grated chedder cheese 8?
1 tsp salt
1 tsp pepper

mix together with jicama in greased casserole dish
bake @350 for 45-60 minutes.
