Low Carb Lobster Cakes
Servings- 2
Ingredients
1 cup cooked chopped lobster meat
2 tablespoons olive oil
2 large eggs beaten (2 net carbs)
1/2 cup shredded Cheddar cheese
1 tablespoon grated Parmesan cheese
Salt & pepper to taste
Dipping Sauce
3 heaping tablespoons mayo
1 heaping tablespoon fresh chopped dill
1 drop green food color
1 1/2 cups salad greens and a small tomato (3 net carbs)
Directions
1. Mix the lobster together with the eggs, cheeses and 1/2 teaspoon of salt and 1/2 teaspoon of pepper.
2. Mix together the mayo, dill and food coloring, set aside.
3. Spread the salad greens and chopped tomato over a serving platter.
4. Heat the oil over medium/high heat in a non stick skillet.
5. When the oil is hot drop rounded tablespoons of lobster batter into the pan, gently flatten them a bit with a fork to form cakes.
6. When the bottom edges turn a golden brown flip the cakes and cook until the bottoms are a golden brown.
7. Arrange the cakes on your platter on top f the greens and spoon little piles of sauce here and there. Serve while hot
TIP- Crab can be used in place of the lobster for crab cakes.
