I think you will love the cookies F2S!  Be sure to stick them in the fridge when they cool so they don't crumble.  Oh, and thanks for the second! ;D   You folks are just too kind!

I have made similar cookie with regular peanut butter for my Dad who is celiac - it's always a hit!  I made these this morning, adding a teaspoon of vanilla - they are pretty good, definately not peanut buttery - but similar and a godd option for dessert!   Thank you for sharing!!

My question is how is it determined that these are Net 2 carbs for entire batch?

Per the label - 2 tablespoons are a serving and there are 13 servings
The Xylitol shows 1 teaspoon has 4g total carbs (4g sugar alcohol)

I am new and just trying to understand how to get to 2 Net carbs for entire batch!

You don't add the sugar alcohols, so those don't count. Beanit Butter has 0 carbs because you subtract the fiber. So, it would be my guess that the 2 carbs come from the 2 eggs. I hope this helps. I cut the recipe in half and make my cookies really small. I get 24 cookies doing it that way.

Okay need feedback...............
Beanit Butter Cookies
Ingredients

2 cups Beanit Butter (Your peanut butter)
  1 cup xylitol
2 eggs
2 teaspoons baking powder

Preheat oven to 350.
Beat eggs in a medium size bowl.
Add xylitol to eggs. Mix well.
Add Beanit butter and baking powder. Mix until all ingredients combined well.
Grease cookie sheet.
Roll dough into balls and place on cookie sheet.
Flatten balls twice with fork.(crisscross)
Cook for 8 minutes. Cool on rack. Refriderate to firm after they cool.Store in Fridge.

Carbohydrate count is: 2 carbohydrates for ENTIRE RECIPE!

What would I substitute for the 1 cup of Xylitol?  I did purchase FTS Sweetner. Would this work? If so, how much? Thanks!!

Zero is Splenda without the carbs!
It is made from sugar, so it tastes like sugar, without any weird aftertaste.
One bottle is equal to about 6 pounds of regular sugar. So it goes a LONG way!

They are keep in the freezer though keeps them crisp ;)
