Ooey Gooey Cheesy Yummy Bass Florentine




Makes 2 personal casseroles

 
INGREDIENTS
Bass or other white fish filets
Butter
Frozen chopped spinach
Chopped onion
Diced garlic
Bertolli Alfredo sauce
Cooking sherry
Cheddar cheese
Salt & pepper to taste

Preheat oven to 400 degrees. Squeeze the water out of a box of frozen spinach and place spinach in mixing bowl.  Rough chop 1/2  small onion and toss in bowl, add 1/2 jar of Bertolli Alfredo sauce, 1/4 cup of cooking sherry, two cloves of diced garlic, 1/4 cup of shredded cheddar cheese, and mix up the "goop." J Split the goop between two individual baking dishes that have been well buttered. Place a nice filet of grouper into the goop and press down, flip the filet over and salt & pepper, top it with a couple of tabs of butter and bake for 25 to 30 minutes.  

TIP - You can use any fish of your choice, or even shrimp or a chicken breast. If you use a chicken breast, cook long enough for chicken to be cooked through. These freeze beautifully in individual baking dishes for quick dinners. I always make four at a time: 2 for us and 2 for the freezer.

I used a Tuscan cheddar from Sams Club with fennel and it gave the fish a wonderful flavor :)
