As you all know Umpa and I LOVE fishing...and we love to eat the fish we catch. In fact we only fish for the species we like to cook with. We leave the big :catch and release: sport fish to others. For us it's all about the recipes. Tonight we'll enjoy one of our fav species, Gag Grouper. We caught this 30 inch Gag day before yesterday and we have countless recipes to enjoy the thick white filets. Tonight's recipe will include 4 of the top 10 brain food ingredients, fish..curry..berries and leafy greens. Why brain food? Brain foods keep you sharp, balanced and functioning properly. Continued consumption of brain foods have also been linked to lower Dementia and Alzheimer's. Include better memory function into the party and brain foods quickly become one of our most important food groups. Here's a recipe I'm certain you'll enjoy.
Baked Grouper with Thai Curry Sauce and Spinach
CURRY SAUCE INGREDIENTS:
1/2 cup fresh cilantro, chopped
1 can low carb coconut milk
1 tablespoon grated fresh ginger
2 teaspoons garlic powder
2 tablespoons Seal Sama sugar free terriyaki sauce
4 tablespoons San-J Szechuan Sauce
2 tablespoons curry powder
2 drops FTS Zero Sweetener
DISH INGREDIENTS
4 cups fresh spinach
2 large Grouper Filets
1 cup frozen or fresh blackberries
4 large scallions chopped
INSTRUCTIONS
Preheat your oven to 350
1-Make the sauce first by adding all sauce ingredients into a blender...blend
2-Microwave the spinach or pa fry in a bit of water for a couple minutes to wilt and reduce.
3-Devide the spinach between 2 individual baking dishes
4-Place a Grouper filet on top of the spinach
5-Pour the sauce over the fish
6-Sprinkle the chopped scallions and blackberries over the top of the sauce
7-Bake for 35-40 minutes or until the fish has split and the sauce is hot and bubbly
