jimmy dean sausage casserole

I made a sausage casserole yesterday morning that turned out pretty good. I was making regular breakfast casserole for my deer hunting group, and I made this one for me.

Brown and crumble a pound of breakfast sausage
Make 4 one minute muffins.
In a bowl, mix 4 eggs, 1/2 cup cream, 1 cup water, and 1/8 tsp black pepper.
Tear up muffins and stir in mixture until coated.
stir in breakfast sausage and 3/4 cup shredded cheddar cheese.
pour into a greased 7x11 baking dish, sprinkle 1/2 cup shredded cheddar on top.
Bake at 350 degrees for 45 minutes or until a knife inserted in the middle comes out clean.

It kinda tastes like a sausage egg and cheese pancake sandwich. I made it up the night before and threw it in the fridge and baked it for 50 minutes the next morning. It's really easy and good! I'll be eating leftovers for breakfast all week!

Nice! You could probably make bread pudding the same way with the one minute muffins ;)

Welcome cnix17 - the OMM (one minute muffin) was what got me over my pasta and bread cravings.  Makes a good substitute for a sandwich.  I think it was Tony (mouseissue) who suggested avocado, bacon, lettuce & tomato (mayo) on a OMM sandwich.  Yummo

Luv this casserole! Shared with non-FTSers & they liked it too. Next time I may add some onions. Leftovers/planned overs are good.

This recipe is great as is... But I felt like making something with a Mexican flare.

I used half Jimmy Dean's sausage and half Italian sausage (removed from casings).
And instead of the Alfredo sauce, try sour cream (with 1 TBSP Cilantro) and salsa as a topping.
