Graham crackers
« on: December 27, 2012, 11:38:03 PM »
I tried a new recipe the other day from,"All day I dream about food".  It's homemade low carb  graham crackers, and they taste great!

Preheat oven to 225.
mix 1 1/2 cups almond flour
1/2 cup flax meal
2 tsp cinnamon
1 tsp baking powder
1/4 tsp salt
mix well

then add 1 large egg
2 tbs melted butter
1 tbs blackstrap molasses
2 tsp vanilla
12 drops zero
mix well again, make sure you scrape down the sides

Roll the blob between two sheets of parchment paper to about 1/8" thick. cut it into squares, move any oddball pieces back to where they square up. Poke them all with a fork to make them look like graham crackers.

Throw them on a cookie sheet in the oven for an hour. Then shut off the oven and leave them in there for another hour. Take them out and snap them into crackers and enjoy.

I really like these. I can't wait to use them them for a cheesecake crust!

Molasses is the only thing I know that tastes like molasses. Some people substitute maple syrup for molasses, so maybe sf maple syrup?

Thanks for getting back to me. I am worried about the amount of sugar in the black strap, Should I be?

The blackstrap molasses adds 11 carbs to the batch. I come up with about 21 carbs total. It makes about 20 2x2 crackers. So about 1 carb each. Real graham crackers are 11.5 net carbs per serving. You still don't want to eat the whole batch at once.
