What is your "go to meal"

What is your "go to Meal " when you have time to make.
mine is:
Friend eggplant and chicken.
I season the eggplant, with several spices: salt, garlic pepper and hot pepper. then fry it, until it becomes soft.
Now for the chicken: One chicken breast cut into cubes, seasoned with all above spices,  and cooked the same way.
Then I mixed the two together and enjoy. Kind of like a mid. east dish 
Taste really good.  ;)

A good stir fry of any kind is my favorite  ;)  Oooooo  fajitas....mmmmm   ;D

Omelettes with lots of stuff in them.  If they get messed up when I flip them, they are scrambled eggs.  Life's a game of chance.

I'm with Andrea on this one, Jetfan! :)

Omelets are probably THE most versatile dish.
Plus, if you keep them simple, their quick and easy!

Depending what you add, they make a great breakfast, lunch, or dinner! ;D
When in a rush, I'll make an "pan egg pizza" using lots of mozzarella with Italian seasoning and marinara with a dash of white wine!... YUM!!!  :) :) :)

I have one of those redi set go cookers, maybe you have seen the infomertial.  I spray it with olive oil, put in my piece of tilapia and season with Mcormick Garlic and herb salt free seasoning and set the timer for seven minutes.  I really enjoy this with cauli mash.

When have time, though still doesn't take all that much time to make - Pasta carbonara with lemon pepper chicken.
Coat chicken with lemon pepper seasoning and fry in a little olive oil.  Fry some bacon and a little onion (even some mushrooms). Remove chicken and slice.  Pour cream into the pan with the bacon, etc and reduce.  Throw the chicken back in and your favourite noodles (mine are the konjac ones).  Simmer till hot and voila - dinner.

After reading through this topic for only two or three minutes, I wasn't sure whether I should comment or go on and start cooking. But I guess that's the problem when you read a topic like this just before lunchtime. :-\
 
But seriously, my go-to meal is quite often bacon and eggs. Plain and simple or sometimes I put cheese on top of the bacon which is equally delicious.

Mmmmnnn..... now I really am going to have to start cooking. ;D

Actually Mark, I can eat bacon and eggs for all sorts of meals, be it breakfast, lunch, dinner or snack.  I have them almost daily for breakfast.  It is my favouritist dish  :D

i agree Mark! I do the forum in the morning while having coffee and I am starving after!! Maybe I should do it after lunch! :D
