Cheesy Skillet Bread-

Umpa I need your help. I have a great looking recipe that is already low carb and would work for most. Accept with my son's treenut allergies I can't use Almond flour or Almond milk that is called for in the recipe. So I wondered if you could look it over and try adjusting the ingredients so I can make it for my kiddo??


Cheesy Skillet Bread:

Ingredients

    1 tbsp butter for the skillet
    2 cups almond flour
    1/2 cup flax seed meal
    2 tsp baking powder
    1/2 tsp salt
    1 & 1/2 cups shredded Cheddar cheese, divided
    3 large eggs, lightly beaen
    1/2 cup butter, melted
    3/4 cup almond milk

Instructions

    Preheat oven to 425F. Add 1 tbsp butter to a 10-inch oven-proof skillet and place in oven.
    In a large bowl, whisk together almond flour, flax seed meal, baking powder, salt and 1 cup of the shredded cheddar cheese.
    Stir in the eggs, melted butter and almond milk until thoroughly combined.
    Remove hot skillet from oven (remember to put on your oven mitts), and swirl butter to coat sides.
    Pour batter into pan and smooth the top. Sprinkle with remaining 1/2 cup cheddar.
    Bake 16 minutes, or until browned around the edges and set through the middle. Cheese on top should be nicely browned.
    Remove and let cool 15 minutes.

Notes

Serves 10. Each serving has 7.2 g of carbs and 4 g of fiber. Total NET CARBS = 3.2 g.

I just wanted to throw this out there....I ran across a post tonight about using sunflower seed flour to replace the almond flour for those that are allergic to nuts.  Grind up sunflower seeds the same as you would the almonds....Hmmm I wonder what the carb count would be on that?   Could get kinda high maybe  ???

Sherri i made this with golden flaxseed .Soy flour has a tendency to turn bitter over 400 degrees.I would suggest though you don't use a skillet use muffin or cupcake pan. The center of the bread was wet from the liquid the cheese put out ,too much cheese.
Ingredients

    1 tbsp butter for the skillet
   12 drops zero
   2  1/2 cup golden flax seed meal
    2 tsp baking powder
    1/2 tsp salt
    1 cup shredded Cheddar cheese, divided (no more than a tablespoon inside then sprinkle on top)
    3 large eggs, lightly beaen
    1/2 cup butter, melted ( I used butter flavored crisco bars)
    1/2 cup whipping cream
1 cup water
Baked skillet for 40 minutes muffins will probably be about 25 minutes until toothpick comes out clean

It shouldn't.
Sunflower seeds have the same carb count as almonds (about 2.25 grams per ounce).
