Chicken Bacon Spinach Casserole

Chicken bacon spinach casserole

1 grilled boneless chicken breast (cubed) (0 g carbs)
2 cups (before wilting) spinach wilted (2 g carbs – 2 g fiber = 0 net carbs!)
1 cup cauli rice (2 g carbs)
½ cup shredded sharp cheddar cheese
¼ cup chopped green onions (0.5 g carbs)
4 slices bacon (chopped) (0 g carbs)
2 T sour cream (2 g carbs?)
1 T butter
optional: crushed pork rinds for topping

Mix all ingredients except pork rinds in 8 x 8 in glass baking dish. Season to taste with salt, pepper, garlic powder, etc…Spread pork rinds on top just before baking. Bake at 350 for 25 minutes.


4.5 g carbs divided into 4 servings =  1.125 g carbs per serving

Umm...question. Should the bacon be cooked before you add it? Or does it cook at the same time as everything else?

Beebs doug uses a knife to cut his rice from cauliflower.If there is a grown up in the house you can try the same thing! ;D

Let me explain the Knife method, start trimming the outside of the cauliflower very thinly continuing to roll it around on the cutting board as you work. You'll notice what's falling off onto the cutting board is exactly what you want..... Careful beebs, there's carbs in "Beeb Fingers" I know there must be because you are very sweet :)
