On page #148 in the new and revised FAT TO SKINNY Fast and Easy book you'll find this recipe;

Berry Berry Pecan Waffles with Ham
Serves 2
Ingredients
¼ cup New Hope Mills Sugar-Free Pancake and Waffle Mix (3 net carbs)
2⁄3 cup water
1 large egg (1 net carb)
¼ cup chopped pecans (1 net carb)
2 tablespoons vegetable oil
Nonstick cooking spray
Butter
1⁄2 cup blackberries and raspberries mixed (4 net carbs)
Sugar-free maple syrup
Sliced ham

1. Beat the waffle mix with the water, oil, and egg until well mixed. Add
the pecans to the batter and stir to incorporate.
2. Spray nonstick cooking spray on the waffle-maker surfaces and cook the
waffles in your waffle maker according to the manufacturer’s instructions.
3. Place a few fresh berries on each waffle and top with the syrup. Serve
with a slice of ham left over from ham night.
