Daikon soup

As I am interested in the vegetable 'daikon' lately, so this weekend I made a soup:

Used 3 daikon - Cut up in bite size pieces - (they are long and look like a white radish - they are sweet and fibrous)
Used a pork loin which I cut up into bite size pieces or whatever pork cut you want to use.  We just so happened to have this in the freezer.
8 bok choy leafs (did I spell that right?)
Used one can of broth, I actually used chicken broth.  or you don't have to use broth and just use water instead.  With the both I added water to cover veggies and meat (store bought broth or you can use your own home made)

Placed all ingredients in stock pot and cooked until the daikon was tender which takes about an hour.
Sprinkled salt and pepper to taste in the stock pot and stir.

That's it.

You can add whatever you want to make it your own soup.

I am enjoying a bowl at the moment for lunch, too!
