this is a wonderful Rabbit recipe. Rabbit is widely served all through Europe and is a delicious meat. The flavor is mild and somewhere in the middle between white and dark chicken meat. If you're lucky enough to live in an area where rabbits are raised for slaughter you'll be able to buy a fresh one. If not ask your butcher at the market if he can order in a frozen one for you. Some markets carry frozen Rabbit all the time, others don't.
Roast Rabbit with Blackberry Sauce
INGREDIENTS
1 large Rabbit quartered
2 tablespoons Glucoman Powder in a salt shaker
Salt and Pepper
Ground Thyme
1/4 cup olive oil
1 large onion rough chopped
2 turnips rough chopped
2 stalks of celery rough chopped
3 slices of bacon
1 small piece of ginger, minced
1 clove garlic, minced
1/2 cored and rough chopped
2 cups fresh or frozen blackberries
6 drops FAT TO SKINNY Zero Sweetener
2 tablespoons butter
1 cup red wine
DIRECTIONS
1- Preheat the oven to 350 degrees
2- Heat the olive oil in a large oven proof skillet over medium heat
3- Salt and pepper the rabbit pics then shake the Glucoman Powder on all sides
4- Pan fry the Rabbit till browned on all sides
5- Place the pan into the Oven and roast the Rabbit for 30-35 minutes or until the internal temp is 140 (rare)
6- Remove the Rabbit and set aside. as it rests the internal temp will rise to 150 (medium)
7- Place the Skillet on top of the stove over medium high heat.
8- Pan fry the bacon till crisp then set the bacon aside.
9- Saute all the veggies and apple til fork tender, season with a bit of Thyme and salt and pepper then set aside
10-Pour the wine, blackberries, ginger, garlic and sweetener into the skillet and reduce till thickened like pancake syrup
11- remove from heat and add the butter, stir till melted
12- Place a bed of veggies on the dinner plate
13- Place a serving of Rabbit on top of the veggies
14- Pour some sauce over the rabbit and top with crumbled bacon
