Outback's Alice Springs Chicken

For anyone who has had Alice Springs Chicken at Outback Steakhouse, this is a must! Recipe is written for 1 serving, for carb count ease...the only real carbs are in the dressing, which is 3g per tablespoon.

1 Chicken Breast
2 strips of Bacon, cooked
1/4c. Mushrooms, sliced thin
1/4-1/2 c. Grated Cheddar
1 TBSP. Marie's Honey Mustard Salad Dressing
Stevia/Splenda/Zero Drops Sweetener (to taste, optional)
Parsley (for garnish, so not required at all)

Season (S&P) chicken breast and cook using preferred method (grilled is my preference, but you could bake it or sauté as well).

Mix Honey-Mustard dressing with a bit of sweetener to cut the vinegar taste if desired, or use straight out of bottle. I used Splenda to tone it down a bit, but it did make it a tad sweeter naturally. Spread dressing on top of chicken breast.

Arrange mushroom slices on chicken breast, then crisscross bacon strips, and sprinkle grated cheddar on top.

Bake at 375 until cheese melts, 10-15min? ENJOY!


Tip: The mushrooms can be lightly sautéed first if you prefer. When I buy sliced mushrooms, they are sliced 1/4" thick, which is too thick to cook through in the short baking time.

I loooooove to cook, so it's a constant hunt for recipes that don't taste "altered" for my comfort food junkies, ya know? My husband and I are low carbing it again after a few years and doing well. About 10 years ago, we started (during the huge Atkins boom) and it seemed no one knew how to cook! I was pleasantly surprised to see LC recipes have came so far. I remember LC tortillas that tasted like brown paper bags when fried, and the only bread was crushed pork rinds! LC baking wasn't even a consideration!

Great to see the contributions you have made to the LC community! I wish you continued success!

Thanks all! What a warm welcome!

I was thinking about this recipe after my post and forgot to mention the total carb count is probably in the 4-5 range, depending on how much dressing is used, mushrooms, and the carb count of your preferred sweetener. Still completely doable on a <20 carb day.

The Marie's dressing was the lowest carb "normal" dressing I found, albeit I didnt look to hard, since i love Maries products, and was satisfied with the carb count. By "normal", I mean not one formulated especially for special diets (LC, Diabetic, etc). I've purchased so many awful LC products over the past 10 years, that I'm now on a quest to find the lowest carb products that are available at everyones grocery store. To me, it feels more like a lifestyle change (and less like a diet) if I can incorporate these products it into my current lifestyle. I don't see myself ordering Miracle noodles, for example, online for the rest of my life. But spaghetti squash, that's an option, as it is available in the grocery store. That's just me though!

I love this recipe, going to make my own honey mustard.
LC Honey Mustard
2 C. Mayo
3-4 T. Apple cider vinegar
2-3 t. Dijon mustard
3-4 t. garlic powder
1/2 t. paprika
4-5 drops Zero Sweet
