Corn Tortillas

I'm trying to find a good corn tortilla alternative. I can find lots of low carb flour tortillas but not corn. Mary & I are not too fond of flour tortillas, even the carb ones. Any ideas on how I make some low carb "corn" tortillas?

There flax tortillas. I haven't tried them.What do you use the corn tortillas for? :)

For tacos. I warm them on the stove in oil. The lowest carb corn tortillas I can find are the small thin ones from Mission. We don't want to waste 14 carbs on 2 tacos anymore. Mary never tires of eating tacos by the way. I dice up vegetables and add to meat.

A corn tortilla is going to be hard to find that is low carb...I just don't think you are going to find something that is ready made that fits as FTS friendly.  We might could come up with a recipe for one..I'm not sure though.  I'll put my thinking cap on  :)

The Mama Lupe Low Carb Tortillas taste like corn tortillas to me  :)

I'd have to order those from Netrition online. That costs more than what fits my budget. I still do need a recipe. I was thinking of flaxmeal with masa, maybe that would cut the carbs. I have always purchased my tortillas at our local Mexican market. Mexico is only a 2 hour drive from here in Southern California. I might have a pretty good idea of what a corn tortilla should taste like, LOL. :)

Maybe flax meal mixed with a low carb cornbread mix? I wonder if the texture would be too bready and puff up too much (I've never used LC corn bread mix so maybe it already has some sort of leavening added). It's an idea?

Or flax meal and soy flour? Maybe with some almond meal?

I'm making tacos this week so I'll try a few methods and let you know if any work out. :-) I had always made a formed taco shell with cheese before as I like hard tacos but this is different so this should be fun! I imagine it might be good for enchiladas as well since those use corn tortillas usually as well. I'll keep you posted!

Which low carb cornbread mix would you use?

Corn is VERY high in carbs! :o
So be careful in your selection.

We do have a cornbread recipe here.

Looked at the cornbread recipe. I'm going to try to make tortillas with almond meal & flax meal today.

Thanks! I've been lurking since reading the book. :-D Great stuff. It's really working for me...which says a lot.

I will let you know what I find out! I might have some time to experiment tomorrow...I feel a taco night coming on. ;-)

I've got to try that! Last time my husband prepped up our romaine he left a bunch of leaves for me to use as wraps. Isn't that nice??? :-)
