I'd have to order those from Netrition online. That costs more than what fits my budget. I still do need a recipe. I was thinking of flaxmeal with masa, maybe that would cut the carbs. I have always purchased my tortillas at our local Mexican market. Mexico is only a 2 hour drive from here in Southern California. I might have a pretty good idea of what a corn tortilla should taste like, LOL.
Maybe flax meal mixed with a low carb cornbread mix? I wonder if the texture would be too bready and puff up too much (I've never used LC corn bread mix so maybe it already has some sort of leavening added). It's an idea?
Or flax meal and soy flour? Maybe with some almond meal?
I'm making tacos this week so I'll try a few methods and let you know if any work out. :-) I had always made a formed taco shell with cheese before as I like hard tacos but this is different so this should be fun! I imagine it might be good for enchiladas as well since those use corn tortillas usually as well. I'll keep you posted!
