Making Meals from what's on hand

Money is so tight due to so many expenses due at once. I am getting very creative making meals with what I have on hand.
Made a Mexican meal past couples of nights with onion, red & green bell pepper, soy black beans, diced tomatoes, chicken pieces cut from an 8 oz breast. Added cumin, Mrs Dash's Chili Lime & Chili powder and topped w/ fresh avocado I had in fridge.

Last night I slice zucchini lengthwise into narrow thin strips then cut those in thirds to resemble egg noodles. Made an Alfredo sauce with butter, cream & mozzarella. Sauteed the zucchini in oil and bacon bits, added 3 oz foil packed salmon. Used FTS Alfredo recipe, did not have anymore Parmesan.

Out of almond flour. At $6.99 lb I can't replace it. I had coconut flour on hand and the cake turned out wonderful. Added 2 T coconut flour, 2 T cocoa and 1 T oil and 2 T Xylitol to recipe.

I made blueberry muffins in cup in microwave this morning. Made up recipe and it worked out! Mary said it tasted so good that next time make it without blueberries & top with whipped cream & strawberries for strawberry shortcake.

Here's the recipe:


2 T coconut flour
2 T soy protein
1 tsp baking powder
2 T Xylitol
1 extra large egg or 2 med eggs
1 tsp vanilla
1 T oil
16 frozen blueberries

Mix dry ingredients first, then add wet ingredients except blueberries. I use a whisk to mix it well.
Then I fold in blueberries with a rubber spatula. Spray an extra large mug with oil.
Use spatula to put the the mix in the mug. Microwave on high for 1 minute 45 seconds.

Here is how I made the chocolate cake in a mug

Coconut Flour Chocolate Cake in a Mug
2 T Coconut Flour
1/2 tsp baking powder
1 pinch salt
2 T baking cocoa
2 T Xylitol
1 egg
1/2 tsp vanilla
4 T almond milk
1 T coconut oil

Combine dry ingredients
Combine liquid ingredients
Pour wet into dry
Mix until lumps all gone
Spray an extra large mug with cooking oil spray
Use spatula to wipe mix into mug
Microwave 1:30 mins to 1:35 minutes
Eat right away for best moisture.

Thanks they both look soooo good will try chocolate for dessert tonight and blueberry for breakfast  now I know i can still eat great even on a budget thanks again

Looks delish!  If you have a trader Joe's in the area - they sell bags of almond flour for $3.99  :)

Kim, thanks for telling me about Trader Joe's. Will go there next time I have money for food.

Mary, my 14 yr daughter that I homeschool, loved lunch and wanted me to save recipe. I tried to make lunch low carb so I used only 1/2 cup of canned diced tomatoes. It was 5 net carbs for 1/2 cup. Added 1 tbsp Worcestershire sauce, 1 tsp onion powder, 1/2 tsp oregano, 1 tbsp minced fresh basil, 2 tbsp canned grated Parmesan and 3 drops Fat to Skinny Zero Sweetener. Sauteed in 2 tbsp oil, 2 small Italian Zucchini that I sliced into strips using my cheap mandolin on french fry slicing side. Added tomato mixture to that & 8 oz pre-cooked lean ground turkey until zucchini was soft & meat nice & hot.
I buy a 5 lb chub of frozen ground turkey for $7. Then I cook it all, weigh it into meal portions. I get about seven 8 oz portions and two 6 oz after cooking. I make my low carb Mexican dish, chili, tacos & pasta meals with it.

Had to get free food at food bank this week. got lots of fresh vegetables- 24 mini bell peppers, 1 bunch asparagus, 7 zucchini, 3 cucumber,3 yams, 5 yellow squash, 15 avocados, 2 large red bell peppers, 1 head lettuce, 2 chayote squash, 5 lemons, 6 tomatoes, 1 cabbage & bag of bean sprouts.

Now my empty fridge is full again!

Question- has anyone cooked chayote squash?
