Yes. i poke a few wholes in them wrap them in a paper towel and microwave till soft.Then I serve them with butter and sour cream ;)

What's the carb count on them?

I found a good recipe for them:

Chayote Squash

4 medium chayote squash, peeled, pitted, and cut into 1/2-inch dice
1/4 cup chicken broth, or more if necessary
3 tablespoons unsalted butter
1/4 cup minced white onion
2 tablespoons finely chopped Italian parsley
1/3 cup heavy cream
Salt and freshly ground white pepper

1. Combine squash and broth in a medium saucepan. Cover, and place over medium-low heat. Simmer until squash is tender, about 12 minutes, adding more broth if pan becomes dry.
2. Meanwhile, melt butter in small skillet over low heat. Add onion, and saute until translucent. Remove from heat, and add parsley.
3. Add onion mixture and cream to cooked squash and its remaining liquid. Toss to mix. Season with salt and pepper to taste. Return to medium heat just until cream is bubbling and squash is reheated. Serve immediately.

sounds good ;) Carb count is in the book. You are going to enjoy them.If you start one you can plant a vine.There are instructions on the forum of how to grow them :)

Made a delicious hamburger just now! Ground beef (mixed in cracked pepper & salt and 1 T Worcestershire sauce), grilled onions, thinly sliced kosher dill, mashed fresh avocado, grey poupon & sugar free ketchup wrapped in lettuce.

Mary & I made this up together last night for dessert.





Shortcake
2 tbsp coconut flour
2 tbsp soy protein
1 tsp baking powder
2 tbsp xylitol
2 large eggs
1 tbsp oil
1 tsp vanilla

Mix dry ingredients.
Add wet ingredients to dry, mix until moist.
Spray a large mug with cooking spray
Use rubber spatula to put mix in mug.
Microwave 1 minute 45 seconds.

Strawberries
1 cup frozen strawberries
2 squirts Nutella Liquid Stevia (sold at Walmart)
1/2 tsp guar gum or other thickener

Microwave strawberries 2 minutes to thaw.
Mash strawberries .
Add Stevia & guar gum.
Mix until thick.


Whipped cream
1/2 cup heavy whipping cream
6 drops Fat To Skinny Zero Sweet

Add zero sweet to whipping cream
With a whisk whip up the cream until thick

Make your shortcake!

Serves 2

That shortcake sounds great too, Susie! :) :) :)

However, I would substitute FTS Zero for the xylitol and Liquid Stevia.

I will use xylitol on occasion if I need the bulk.
Even then, I would try to substitute oat fiber if the recipe would work.

Mary likes pasta made with "zucchini noodles", so I cut a huge zucchini into long skinny slices sauteed in olive oil in pan. Sauteed crimini mushrooms, minced fresh garlic and onions, fresh diced bell pepper & 5 oz ground beef. Then looked into freezer, fridge & pantry, no tomatoes or sauce or paste etc anywhere. Had to think real quick while everything cooking on the stove. Aha! I got out my low sugar ketchup, put 1/4 cup in pan with 1 cup water & some oregano & parmesan cheese. Reduced it down to sauce consistency.
It actually turned out delicious!

These are some really great ideas! I just bought a few lbs of coconut flour so I've been experimenting and making a few new recipes I've found like quick bread, pancakes, etc and so far I really like it! I'm collecting good recipes for coconut flour now! :-) I like the texture especially mixed with almond flour but I had bought Bobs red mill almond which is blanched so the carb count is higher (darn!) but I'm still going to try to use it all up before I get the Now brand because I like the idea of unblanched and the lower carb count but I will have to wait. *sigh
