Hi Umpa -- here is a refrigerator creamy lemony flavor thing I'd like to convert.....what do you think  is it doable?

Graham cracker crust -- I could live without the crust even....that's really basic so I didn't add it here. 

1 (12 oz) can regular evaporated milk (chilled overnight in refrigerator)
1 (.3 oz -- small package Lemon Jello
1 3-4 cups boiling water
1 cup sugar

1.  Chill unopened can of evaporated milk in the refrigerator overnight.
2.  Dissolve jello in hot water and chill until partially set.
3.  Whip jello until light and fluffy.
4.  Add lemon juice and sugar to the whipped jello and mix.
5.  Whip the chilled evaporated milk; fold into the jello mixture.
6.  Put in 9 x 13 pan (that had grahm crackers base....but I would just put the lemon bisque mixture in plastic container.
7.  Chill until set.  This takes about 5 hours. 

When my mom made this she sprinkled graham cracker crumb mixture on top also,.....Like I said above, I'm interested in making the creamy mixture above.....and also, thinking I might would try adding Key Lime Juice instead of lemon juice....

What do you think?  Can this be made into low carb?

This reminds me of lemon meringue pie! ;D ;D ;D

yes!do you have the bakery book? If you don't I will post the recipes.Graham cracker pie crust is in there,condensed milk, there is also a lemon bar recipe. I use a lime alot love it.There is also a lemon meringue pie recipe in there and key lime pie too ;)

Here you go kids :) directly from the FAT TO SKINNY Sugar Free Bakery Book page 329

Lemon Squares



 
Crust Ingredients

   1 cup Now brand un-blanched almond flour
   1/8th cup Xylitol or 6 drops FAT TO SKINNY ZERO sweetener
    cup butter

Filling Ingredients

   4 large eggs
   1/3rd cup key lime juice or lemon juice
   24 drops FAT TO SKINNY ZERO sweetener
    cup Now brand un-blanched almond flour
   1 teaspoon baking powder

Crust Directions

1.   Preheat oven to 350
2.   Combine almond flour and sweetener in a large bowl.
3.   Cut in butter until mixture is well mixed and looks like crumbs..
4.   Press firmly into greased 9 x 9 square inch pan.
5.   Bake in 350F oven for about 20 minutes until golden brown. Remove from oven.

Filling Directions

6.   Beat eggs in large bowl until frothy, add juice and stir well.
7.   Combine ZERO, flour and baking powder in small bowl.
8.   Add to egg mixture and stir until just moistened.
9.   Spread evenly over crust.
10.   Bake for about 25 minutes until set.
11.   Cool completely on wire rack then transfer to refrigerator to cool further before cutting. Cuts into 48 squares

  TIP- The colder the better when cutting. To avoid filling run off let set completely in refrigerator.
