Umpa’s Chocolate Twinkies
Makes 16 Twinkies 1.14 Carbs per twinkie
You will need a Canoe (Twinkie) Pan to make this recipe.I like this one because it comes with everything you need.

Ingredients
1 1/2 teaspoons fat to skinny zero
2 cups Now unblanched almond flour
3/4 cup Baking Cocoa (unsweetened)Mine is a zero if yours isn’t add additional carbs .
2 teaspoons baking powder
2 teaspoons baking soda
1 teaspoon salt
2 eggs
One cup unsweetened almond milk(I like the almond/coconut mix)
1/2 cup vegetable oil
2 teaspoons vanilla extract
1 cup boiling water
*Filling ingredients below*
Directions
1-Preheat oven to 350.Spray pan with non stick cooking spray.
2-In a mixing bowl add all dry ingredients. Mix well.
3-Add milk,eggs,vanilla,oil and Zero.Beat for 3 minutes.
4-Add boiling water. Mix well.
5-Pour batter into pan filling the pans to the top. Bake at 350 for 25 minutes. Remove from pan and cool completely on wire rack.
Filling Recipe
Ingredients
4 ounces 1/3 Less Fat Philadelphia Cream Cheese
2 1/2 ounces Butter Flavored Crisco Baking Stick
1 Tablespoon Vanilla
12 drops Fat to Skinny Zero
One Tablespoon Whipping Cream
1-Bring cream cheese to room temperature.
2-Put all ingredients in mixing bowl and beat on high for 3 minutes or until light and fluffy.
3-Fill the injector with the filling. Insert the injector into the bottom of the twinkie. Each twinkie will have 3 holes.
Put on plate .After they are all filled change the nozzle to a decorator tip and run a line of filling down the middle.
Must be refridgerated because of the cream cheese filling.
