Crock Pot Balsamic Chicken

Hi, Gang! :)

Here's something I made yesterday and thoroughly enjoyed it!
Served with with steamed broccoli and green salad.

Makes 8 servings with 4 net carbs (if you serve with the liquid in the crock pot).

SPECIAL NOTE I FORGOT TO ADD to original posting...
Spray inside of crock pot with cooking spray BEFORE adding ingredients!
This will make cleanup afterword easier.
I do this out of habit (as I also clean up after cooking).
I guess that's why I forgot. ::)

Ingredients

1 teaspoon garlic powder
1 teaspoon dried basil
1/2 teaspoon salt
1/2 teaspoon pepper
2 teaspoons dried minced onion

4 garlic cloves, minced
1 tablespoon extra virgin olive oil

1/2 cup balsamic vinegar
8 boneless, skinless chicken thighs or breasts
sprinkle of fresh chopped parsley


Directions

Combine the first five dry spices in a small bowl and spread over chicken on both sides.
Set aside.

Combine olive oil, garlic, and pour into the crock pot.

Place chicken on top.
Pour balsamic vinegar over the chicken.

Cover and cook on high for 4 hours.
Sprinkle with fresh parsley on top to serve.

Enjoy! ;)

I got a crockpot at a yard sale, now I can't wait to try that. Hmmm cannot find chicken in freezer... will make it next payday.

Turky would work well with this recipe as well, I would use thighs so they don't dry out :)

I would use turkey with this too, also white meat chicken/turkey with a lot of healthy oil. Dark turkey meat is good, but for some reason dark chicken I bought didn't do well.

I think the chicken was close to half fat, and it did not have a decent texture either. That happens when I try to save money, lol.

Usually, chicken that comes at a price much lower than usual is chicken that was not fed or cared for well.
The old adage, "You are what you eat." applies to chickens, too.

There are exceptions where stores are overstocked and put good chicken on sale.
