Yup glad you found the name funny. I'm calling my zucchini noodles "Zoodles", LOL
Got creative this morning. Not sure what the carb count is.

Pancake Pumpkins
I wanted make something with pumpkin in it for my daughter for breakfast. She loved these!
Serves 4 (Mary & I ate whole thing, lol)
(net 14 carb for entire recipe )

1/2 cup coconut flour (12 net carbs)
1 cup soy protein   (0 net carbs)
1 tbsp flax meal
1/2 tsp Celtic sea salt
1 TBS baking powder (0 net carbs- Clabber Girl Baking Powder Double Acting, Gluten Free)
36 drops FTS Zero Sweet
2 tbsp Pumpkin Pie Spice (no sugar added or homemade)
1 tbsp pureed pumpkin  ( .5 net carb)
1 1/2 cup unsweetened Vanilla almond milk ( 1.5 net carb)
4 eggs (4 net carb)
4 TBS butter or coconut oil, melted
orange food coloring

Preheat pan or pancake puff on low. In pancake puff pan, add 2 tsp. oil in each well. Heat oil until drop of water sizzles, add batter to wells. Fill 3/4 full. Cook 3-5 minutes. Then use pointed stick to flip it over. Cook 3-4 minutes more.
To make pancakes, just drop in pan as usual. Make small pancakes. Sides will become dry, check if it can be flipped.
My syrup is to watery so it made my puffs fall apart. Might be best to use thick syrup or whipped cream & fruit.  Powdered Xylitol would be a nice touch too. I'll make them again this month for my grandson & paint a jack-o-lantern face on them.

"Chicken Fried" Steak in Disguise

Serves: 2  (9 net carbs for entire recipe)
I was looking at old recipes I found one that Mary & I would both like & voila, this gave me a low carb idea! It's from my my mom's recipes for our large family fugal meals. I low carbed it & Mary & I devoured this  ;D

1/2 pound ground beef
1/4 cup coconut flour  (6 net carbs Bob's Red Mill)
salt and ground black pepper to taste
2 eggs (2 carbs)
3 tablespoons vegetable oil, or as needed

Gravy:
1 tablespoon butter
1 tsp coconut flour, or more if needed (1 net carb)
1/2 cup cream

1. Divide the meat into 4 pieces, and flatten into thin beef patties. Heat a heavy skillet over medium heat until almost smoking, and cook the beef patties until browned on both sides, about 4 minutes per side; set the cooked burgers aside.

2. In a shallow bowl, mix together 1/2 cup of flour with salt and black pepper. In a separate shallow bowl, beat the eggs until smooth, mixing in a half teaspoon of water if needed.

3. Heat the oil in the skillet over medium heat. Dip both sides of cooked burgers into the eggs, then dredge in the seasoned flour; repeat 3 times to build up a thick coating on the burgers. Place the burgers into the hot oil, and pan-fry until golden brown on both sides, about 5 minutes per side. Set burgers aside.

4. Now for the gravy. Here's the old fashioned way my mother did it: Melt butter in the skillet over medium heat, and stir to loosen any brown flavor bits left in the bottom of the skillet. Whisk in 1 tablespoon of flour until smooth. Gradually whisk in cream, cooking until the gravy is thick. Season to taste with salt and black pepper, and serve the  gravy over the chicken-fried beef patties.

I have not had chicken fried steak since my old "life" before FTS.
I can tell the gravy is going to be good!... Scraping the frying pan for stuck-on bits is the secret! ;)

This is definitely on my "make soon" list!

Made up another one today. Searched mole recipes then put my own together. Was a great hit with Mary. She devoured her taco. Mine had cheese and a little fresh tomatoes. She just added salsa instead.

Ole Mole Tacos !!

(14 net carbs for entire recipe with tortillas, 6 net carbs wrapped in lettuce)

3 tbsp oil
1/4 cup finely chopped onion (3 net carbs)
1 tsp minced garlic
2 tbsp mexican seasoning ( 0 carbs Perfect Pinch® Mexican Seasoning)
1 tsp baking cocoa (.3 net carb)
1 tsp cumin
1/4 tsp cayenne pepper
1 tbsp chopped fresh cilantro
1/4 cup salsa ( I used La Victoria Salsa 1 carb per tbsp)
6 oz diced chicken, beef or pork ( 0 net carb- I used Foster Farms chicken strips & diced them)
1/2 cup chopped lettuce
2 tbsp diced tomato ( 2 net carbs)
1/4 avocado, diced  (.5 net carbs)
1/4 cup cheese (I used sharp cheddar)
2 low carb tortillas or large lettuce wraps (8 net carb for my 2 Mission Carb Count Tortillas)

Heat oil, then add seasonings, cocoa, onion. heat couple minutes, then add garlic & cilantro.
Heat couple minutes more then add salsa & meat. Cook a few minutes until meat is thoroughly cooked.
Meanwhile prepare your tortillas. I like to fry them.
Fill tortillas with meat mixture, then avocado, then lettuce, cheese & tomato. I topped mine with fresh cilantro pieces.
Serves 2

Be careful of the coconut flour Susie ;) Mine is 3 carbs for 2 tablespoons a cup is a lot of carbs. Please post carb counts with recipes.What is a puff pan? :)

Okay Umpa, I'll modify my posts & figure out carb counts & add. My older daughter gave me a Pancake Puff Pan. It's one of those "As seen on TV" items. Thanks for heads up on coconut flour!!

Another good looking recipe!

Umpa's right!... That's why I usually substitute almond flour for coconut.
It's much lower in carbs, and most recipes are every bit as good. ;)

I made a meal using coconut flour to coat my southern fried steak not too long ago.  It may have been my flour but I thought it tasted kind of sweet.  :P  Not what I was expecting at all  LOL   Did you notice a sweetness in yours Susie?

I didn't taste a sweetness in mine.
I think some foods bring out the sweetness, I've read online that it will have a coconut flavor if sweet added to it.
