Made up another one today. Searched mole recipes then put my own together. Was a great hit with Mary. She devoured her taco. Mine had cheese and a little fresh tomatoes. She just added salsa instead.
Ole Mole Tacos !!by Susie Owens
(14 net carbs for entire recipe with tortillas, 6 net carbs wrapped in lettuce)
3 tbsp oil
1/4 cup finely chopped onion (3 net carbs)
1 tsp minced garlic
2 tbsp mexican seasoning ( 0 carbs Perfect Pinch® Mexican Seasoning)
1 tsp baking cocoa (.3 net carb)
1 tsp cumin
1/4 tsp cayenne pepper
1 tbsp chopped fresh cilantro
1/4 cup salsa ( I used La Victoria Salsa 1 carb per tbsp)
6 oz diced chicken, beef or pork ( 0 net carb- I used Foster Farms chicken strips & diced them)
1/2 cup chopped lettuce
2 tbsp diced tomato ( 2 net carbs)
1/4 avocado, diced (.5 net carbs)
1/4 cup cheese (I used sharp cheddar)
2 low carb tortillas or large lettuce wraps (8 net carb for my 2 Mission Carb Count Tortillas)
Heat oil, then add seasonings, cocoa, onion. heat couple minutes, then add garlic & cilantro.
Heat couple minutes more then add salsa & meat. Cook a few minutes until meat is thoroughly cooked.
Meanwhile prepare your tortillas. I like to fry them.
Fill tortillas with meat mixture, then avocado, then lettuce, cheese & tomato. I topped mine with fresh cilantro pieces.
