This morning I made a filling Mocha Latte for myself....yummy!


Hot Mocha Latte
Was so filling and delicious!
Serves 1- 3 net carbs

1 cup unsweetened vanilla almond milk
1 Tbsp unsweetened cocoa powder (I used Hershey's 2 net carbs)
12 drops Zero Sweet or to taste
2 tsp instant espresso
2 Tbsp heavy cream (1 net carb)
1/2 Tbsp unsalted butter
1/2 Tbsp coconut oil

Blend the ingredients with a wisk or drink blender. Heat in microwave. Blend again until frothy on top. Drink & enjoy!

Moose that sounds yummy too.  Might be some good game day food  :)

Hmmm, looking in fridge & what do I see? Fresh chopped tomatoes, salsa, diced onion, diced cilantro and sliced olives. Ohhh I want it for my breakfast. Let's see, grabbed those items, 2 eggs, shredded sharp cheddar & some salsa. Here is what I made.

Morning Mexican Eggs
Unlike my eggs before, Made eggs separated to keep them fluffy. This time added fresh tomatoes too.
Approximately 6 net carbs for entire recipe. Serves 1

1/2 cup diced tomatoes 2.4 net carbs
2 tbsp medium salsa 1 net carb
2 tbsp sliced olives 0.4 net carbs
2 tsp minced cilantro
1 tbsp minced onion 0.7 carbs
2 eggs 1.2 net carbs
1 tbsp cream 0.4 net carbs
3 tbsp olive oil
1/4 cup shredded sharp cheddar cheese 0.35 net carbs

I sauteed the first 4 ingredients in 2 tbsp oil. While that simmered, whisked eggs & cream. In another pan cooked eggs until fluffy. When done I put them on a plate & covered with a bowl.  When tomatoes & mixture fully cooked, scooped it up onto the eggs & then topped with cheese. place in microwave 25 seconds & voila. a tasty breakfast!

LOW CARB BEEF BOLOGNESE IN CROCK POT
Serves 6
Serve this hearty, meaty sauce over low-carb pasta of your choice. Browning a few of the ingredients before hand adds a rich depth of flavor. For even more flavor, stir in Parmesan cheese before serving. 2.67 net carbs per serving. 16 net carbs for entire recipe. Add net carbs to type of pasta you use this with.
Mary & I loved this!!! Tasted great!!


1 tablespoon olive oil
1 onion, thinly sliced (10 net carbs)
2 ounces prosciutto, chopped
1 pound ground beef
8 ounces sliced mushrooms (2 net carbs)
2 cups beef broth
½ cup Trader Joes Rustico Pomodoro Pasta Sauce (4 net carbs)
Sea salt and freshly ground black pepper to taste
1 tablespoons dried Italian seasoning
 
Directions:
Heat olive oil in a skillet over medium heat. Cook onions and prosciutto, stirring frequently, for 5 minutes. Add beef and mushrooms and cook, stirring often, until beef is browned. Add beef mixture and remaining ingredients to a slow cooker and cook on HIGH for 4 hours or LOW for 8 hours.

Oh I didn't have prosciutto, so I diced up a slice of turkey bacon. Tasted fantastic anyways.

Here's my recipe for a Mexican Omelet from page 110 in the FAT TO SKINNY Low Carb Cookbook

Mexican Omelet
Servings- 1




Ingredients   

   1½ cups ground beef
   1 tablespoon olive oil
   ½ teaspoon ground cumin
   ½ teaspoon cayenne pepper
   Salt and pepper
   1 teaspoon butter
   2 large eggs (2 net carbs)
   ½ cup shredded white cheddar cheese
   2 tablespoon low-sugar salsa (1 net carb)
   1 tablespoon sour cream (optional) (.5 net carb)


Directions

1.   Pan-fry the ground beef in the olive oil and season with cumin, cayenne and salt and pepper. Taste for personal preference and add additional seasoning as required.
2.   Strain the excess fat and set aside.
3.   Melt the butter in a nonstick skillet over medium heat.
4.   Pour 2 well beaten eggs into the pan and cover.
5.   When the eggs start to set, spoon in the meat and cover with the cheese, then fold the omelet, cover the pan, and remove from the heat. Leave covered 2 to 3 minutes to melt the cheese.
6.   Slide the omelet onto a plate, spoon the salsa on top of the omelet, and sprinkle additional cheese on top. If desired, place a dollop of sour cream on top, then serve.



  TIP- To make a wonderful light dinner or lunch serve with avocado.
