Hi, Shawn! :)

I did some digging into why good eggs sink and bad eggs float.

Good eggs are heavier than water.
As eggs get older, gases from aging (i.e. decomposition) slowly build up.
When an egg goes "bad", it will be lighter than water, and float.

And about the shells... Egg shells are primarily organic calcium.
As that calcium ages, it petrifies (hardens) and becomes brittle. ;)

Makes sense to me Tony   ;)   I always do the float test on my eggs before using them.  Just an old habit.  You never know when using fresh that one might slip in that was missed for a while  LOL

I hard boil at least a dozen eggs a week. I'll have to try the splat splat. I already use the ice, but some times they are still hard to peel.

Good info on egg freshness.

If you forget to notice when your eggs started boiling (as I do frequently  :-[), you can let them continue to boil and scoop out one with a spoon and count the number of seconds it takes the water to evaporate off the shell.  When it gets down to about 5 seconds, the eggs are done. I usually check 2-3 eggs just to make sure I'm not seeing things. Drain and cool as usual.

Me too, Elizabeth! :)

The only thing I do did differently is add some salt to and a splash of white vinegar to the water.
The salt helps the water come to a boil more quickly.
And for eggs that do break when boiling, the vinegar speeds up firming so they don't leak as much.
