Christmas Menu

It's Christmas Day here already and I was just about to do lunch, and wondered what you all were having. 

I'm home alone, having done the family lunch on Sunday.  I bought some ham and cooked turkey, so I don't actually have to cook.  I am going to make some roast vegetables,  raspberry 'jam' instead of cranberry, and a cream sauce to go with it.  Spending the day watching dvds and making calls to my friends. 

It is going to be pretty much a 'stinking' hot day, so have closed doors and blinds in effort to keep house cool.

Hi, Morgan! :)

It's Christmas Eve here.

Had ham and turkey dinner tonight with cauli-mash, broccoli, string bean casserole with bacon,
SF cranberry sauce, and a nice side salad (dressing was mayo mixed with SF raspberry vinaigrette).

For dessert, made a SF New York style cheesecake topped with 50-50 SF Raspberry and whipped cream.

For Christmas Day, we plan on leftovers.

Roast Prime Rib, Caulimash, roasted veggies, Cocoa Loco Rum Cake for dessert :)

I have a sirloin roast in the crockpot, making cauli mash & a special broccoli recipe.

I just made up my food as I went. Cooked 1 head cauliflower in microwave until half done. Put it in my Ninja blender with rest of cream in my fridge (about 1/2 cup) and added about 1/4 cup Hains mayonnaise. It did not get smooth in blender, but crumbly like a potato. Then I put in microwave for 2 minutes and whipped it with a whisk a few seconds and it was perfect.
Gravy was made with beef broth, roast drippings and a tsp Konjak root powder (got 8 oz jar from older daughter for Christmas). Was perfect.
Sauteed fresh broccoli, chopped red bell pepper & crimini mushrooms in 4 tbsp butter, 3 tbsp olive oil.
Meal was a hit!

I roughly calculated the sodium to about 500 mg. Even Mary's carb eating dad said it tasted fantastic.
We ate the leftovers and it was just as yummy reheated in microwave.
I still have lots of gravy left and a huge bottom round roast in the freezer. Delicious meals coming ahead.
