Peanut butter fudge
« on: January 05, 2014, 12:41:04 AM »
I don't have access to the ingredients for the peanut butter fudge that is on this forum. I found this one and wonder if you could tell me if it's ok.

peanut butter fudge

1 - 8 oz cream cheese, softened
1  cup smooth peanut better
1  cup butter
1/2 cup powdered artificial sweetener
1/2 tsp vanilla

In a microwave bowl heat the cream cheese, peanut butter, and butter until the butter is melted. Wisk the mixture well. Blend in the sweetener and vanilla. Pour the fudge mixture into an 8x8 dish. Cover and refrigerate until firm then cut into squares.

Looks okay to me - I would just use zero sweetner as the powdered ones tend to have quite a few carbs.  You just have to add up all the carbs and divide by how many pieces it makes.  Try to get a lower carb PB.
Actually, makes me want to make it.  Got no cream cheese at the moment  :(

Thanks, I really like something sweet once in a while and I think this would hit the spot. I also would like some chocolate to. I miss my chocolate. I used to eat a snickers candy bar at least once or twice a week. I find myself craving one. Any Ideas?

I would just add cocoa powder to this recipe.  You can check out some of the sugar free chocolates in the grocery, but be very mindful of the serving size.  Most are made with sweeteners that cause tummy upset.  There is plenty of recipes on the forum.  Just take a look around the recipe section....I'm sure you will find something you will like.  Here is a link to the Desserts and Sweets  http://www.fattoskinny.net/index.php?board=27.0
I can't go without my chocolate!  That is a food group as far as I'm concerned  Haha   :D
