As you can see, some of the ingredients are optional and some can be substituted for another, so this is a very versatile recipe.  Make it the way you like it.

Mini Cakes (makes 12)

3/4 cup almond flour
1/4 cup plus 2 tablespoons pork rinds, coarsely chopped
3/4 teaspoon baking soda
1 teaspoon cinnamon (optional)
4 tablespoons butter, melted
2 tablespoons syrup - flavor of choice or heavy cream
24 drops FTS Zero
1 teaspoon vanilla or other extract
3 eggs
1/2 cup chopped nuts of choice (optional)

Preheat oven to 350 degrees. Oil the 12 wells of a whoopie pie pan.

Grind the pork rinds into a flour.  In a small bowl, stir together the dry ingredients, set aside. Beat together the liquid ingredients with a fork until well blended. Place the butter in a small bowl and microwave high until melted. Stir half the dry ingredients into the butter, then the other half. Stir half of the butter/dry ingredients into the wet until smooth, then the other half.

Spoon into the wells. Bake 7 to 10 minutes. Remove from pan immediately. Let cool before frosting.  Frost with frosting of your choice.  Keep refrigerated.

Okay, A little confused with the above which I cut and pasted into my post.  I can't wrap my arms around what I am supposed to do here.  ........  Let's break it down for me:

Place the butter in a small bowl and microwave high until melted:   I GET THIS PART
Stir half the dry ingredients into the butter (I GET THIS PART)  then the other half (What does this mean, then the other half... Does it mean your are eventually stirring all of the dry ingredients into the butter eventually but in two parts?)

Then the next sentence:  Stir  half of the butter/dry ingredients into the wet until smooth, (WHAT DOES THIS MEAN, INTO THE 'WET') and here we go again...then the other half.  Is this just a repetitive paragraph or am I missing something here. 

I totally blame myself.  Was never really good at this.

Can someone help me here.

Okay, this is how I read it.

Mix all dry ingredients together - check
Mix half dry ingredients into melted butter - check
Then mix rest of dry ingredients in to mix.
Then combine half of this mix (dry/butter) into the wet ingredients (being eggs, cream, zero, etc).
Then add the other half (of the dry/butter).

Seems to me you are just doing the mixing in half batches.  The dry into the butter, then that into the wet mix in half batches.

That makes sense to me. ;D
It's easier to thoroughly mix dry and wet ingredients when we do it more gradually.

okay, it's trying to read crochet or knitting instructions.  They had better be really easy or I don't pick up my needles.  LOL.  Thanks Morgan.  It's pretty clear to me now!

You know what, after reading Morgan's interpretations, I didn't have a problem reading the original script.  I am dazzled by this... 

By the way, what is a whoopie pie pan?????

I haven't made the recipe. What seems to have gone wrong?  If it a matter of rising perhaps swap baking soda for baking powder.

Morgan's tip often works when rising fails.

When baking powder gets old, it loses something.
I find that mine lasts about 1 year when I seal the can in a Ziploc bag and keep it away from
light, heat, and dampness.

Mine doesnt even last a year at 3500 ft elevation,I am lucky if I get 6 months ;)
