Dirty Martini Chicken

I cannot remember where I first found this recipe but if you like a creamy blue cheese sauce smothered over a pan seared chicken breast and sprinkled with a couple olives - it's quite tasty!  After I pan sear chicken, I remove it to a plate tented with foil.  I like to pound my chicken breasts out for even cooking.  Then I pour in a splash of dry vermouth and scrape up the bits.  Chicken stock will work too, or dry white wine.  Then I add cream (eyeball it) and toss in blue cheese crumbles and let them melt a little.  Plate your chicken, drizzle with sauce and sprinkle on some chopped green olives and a few more blue cheese crumbles.  I'm a big fan of Salemville Amish blue cheese crumbles - 0 carbs and I can get a giant container at Sam's Club or a small one at the grocery store.
