Low Carb Cream Cheese Coconut Crepes
Crepe Ingredients
Makes four large crepes
1/4 cup coconut flour
2 tbsp. ground flaxseed
2 eggs
3 egg whites
1/4 cup unsweetened almond milk
1/2 tsp. baking soda
2 drops FAT TO SKINNY Zero Sweetener
Butter
Filling Ingredients
1 cup Kraft Philadelphia 1/3 Less Fat Neufchatel Cheese
1 cup unsweetened shredded coconut
6 drops FAT TO SKINNY Zero Sweetener
Crepe Directions
1- Combine all ingredients except butter in a food processor or blender and blend them until thoroughly combined. 2- Melt some butter in a non stick skillet over medium heat.
3- Pour ¼ of the batter into a hot skillet and swirl it around to create a large, thin circle.
4- Let the crepe cook until the batter is partly firm and bubbly on top.
5- Flip the crepe and cook the other side until it's firm when touched.
6- Place the crepe on a plate and cook the next 3
7- Fill crepe with ¼ filling and roll up (recipe below)
Filling Directions
Mix all ingredients well and beat with a hand beater until fluffy
