Deviled Eggs w/ a crunch BACON!!!!!!!!!!!!!

    Ok we all know deviled eggs and so many variations but tonight I used my usual recipe but added a little something on the top that made it just yummy.



I make mine with:


-Mayo
-Dijon Mustard
-Sea Salt
-Pepper
-Fresh Dill (you can use it from the spice rack but you can't beat fresh dill for enchancing the flavor...I use it a lot)

Tonight I cooked some thick bacon in the microwave until crispy and broke it into 6 small pieces and put a piece on each egg stuffed half.  I was surprised at how good it was with just a small change.  I loved the added flavor and crunch to my beloved deviled eggs.

I put crumbled bacon bits in my deviled eggs on Father's Day.  Everyone loved them.  I also used spicy ranch dressing in place of mayo and mustard.  Sprinkled the egg whites with some cajun seasoning before filling.  I'm not crazy about deviled eggs but these were good!  The bacon really adds a lot.

Thanks for asking about Doug Umpa.  He is battling depression right now because his eyes are really bad and he is having to have laser treatments and chemo injections in them to try to save his vision.  He couldn't pass his eye test to get his license renewed but the doc thinks with the treatments and new glasses he will be ok.  His legs and feet seem to be doing better though and that is good news.  Still not wanting to exercise but we are taking one step at a time.  As far as I can tell he is REALLY sticking to the plan but probably still eating too many calories because his weight goes down a little and then comes back up.  Hence the menu planning, and he is agreeable to it.  You guys are so awesome,  knowing you are there helps so much!!!

Hey let your husband know he's not alone. I have severe retinopathy in my right eye and Im only 34. Improved blood sugars over a period of time CAN improve his conditions! keep the faith!  ;)
