Low Carb Fried Chicken! Tonights Dinner, Yummy

I love fried chicken, fish, cutlets, pork chops, heck about anything you can fry. Of course I was raised in the "can't eat fried food" home because the belief was eating fat makes you fat. Of course that myth was destroyed by many doctors and authors over the past several years including myself with our FAT TO SKINNY book series. So, if you're craving a great piece of fried chicken give this recipe a try!



Ingredients (adjust for serving amounts)

Chicken pieces of choice
1 gallon of mildly salted water
eggs and heavy cream
Italian seasoning
Montreal steak seasoning
Ground plain pork rinds
Deep frying oil of choice


Directions

1- Soak the chicken pieces in the salted water for at least 4 hours, strain and let air dry slightly on counter
2- Mix steak seasoning and Italian seasoning with ground pork rinds to taste
3- Beat equal amounts of heavy cream and eggs together
4- Heat 2 inches of oil in deep skillet to 325 degrees (this is a lower than normal fry temp so you don't burn the coating)
5- Soak the chicken pieces in the egg wash then coat with the dry mix
6- Fry 3 or 4 pieces at a time not crowding the pan and keeping an eye on the temp till golden brown
7- salt and pepper to taste

Serve with our caulimash recipe :)

I LOVE chicken fried in ground pork skins!!!   So crunchy and delicious.  I've just used salt & pepper in the past, but I bet the seasonings in YOUR recipe make this even better!  Definitely trying it your way!  Thanks for sharing this Doug!   :)

I love fried chicken too, Jan! :) :) :)

I bet this would be good with fish, as well.
Maybe need to bump the temp up to 350 and remove from skillet sooner.

Go ahead, fry it up! Chicken, fish, pork, even beef. Don't be afraid of the fried food :)

Yum, Mary like chicken nuggets made with pork rinds. I like to add garlic powder & dash of cayenne pepper. Doesn't make it spicy, just gives it good flavor.

Hi, Itsoversugar! :)

The process of soaking poultry in salted water is called brining.
I do this with turkey and other poultry to tenderize the meat and retain juices.

For turkey, I'll add wedges of orange, lemon, and sprigs of fresh rosemary.
The fruit's citric acid does wonders for tenderizing the meat with negligible carbs.
