The two crusts that I have used so far have been outstanding: coconut/butter/touch of sweetener and the almond meal/butter/touch of sweetener....delicious.

I used tart pans that I had for this cheesecake. They are good but kind of thin and dry.  I plan to get correct pan and try again!  :)

At Walmart they have mini cheesecake pans Amber and mini tart pans :)

AMAZING!  I prepared this with a 1/3 recipe and poured into 2 single serving springform pans.  I topped with my homemade blackberry sauce/jam and sugar free whipped cream.  Absolutely delicious with a cup of coffee!  I think this is my new favorite and will definitely be a crowd pleaser at my next family get together or just for us.  I know my hubby loved it and it looked beautiful.

This is my standard cheesecake recipe.i made the mini(single servings) and before I put them in the oven Izzet i poured a couple of tablespoons of elderberry syrup on top and then took a knife and made swirls.When they were served they were so pretty!I found the single serving pans at walmart and I also bought the mini tart pans.Love them! ;) Glad hubby liked it!

I just have to say this is the GREATEST cheesecake ever. We are always making this! We do crust-less without berries and then add different flavorings. For the last two months I have been adding banana flavor (no carbs) to the mix. Now for Thanksgiving we're adding pumpkin flavoring (no carbs) and some orange food color. I'm bringing it to my sisters Thanksgiving feast so we shall see what they think. I just love, love, love this recipe. We make a pan, slice it up equally so each serving is four carbs. I bag each piece individually and freeze them. So if you want a piece you just grab one, sit it out for an hour then toss it in the fridge and it's good to go. It feels like I'm cheating every time I eat a bite but that scale still goes down. ;)

I agree about the crust getting soggy after the cheesecake sits - I plan on baking the crust and then removing it and crumbling it up and putting it in an airtight container - then when I serve the cheesecake, I can sprinkle the crust on the plate before I put the piece on it.  That way it will always be 'fresh' and not soggy.

Good thinking Marty  ::)  That is one of the reasons I prefer to make it crustless.  Besides saving the carbs  ;D ;D  I think I will try this next time
