Berry, Berrylicious Cheesecake FAT TO SKINNY recipe

INGREDIENTS
one cup sour cream
3 large eggs
1/4 cup xylitol or 10 packets stevita stevia
1 tablespoon vanilla extract
24 ounces cream cheese
1 ½ cups mixed berries and sugar free whipped topping to garnish

Preheat oven to 350 degrees. Spray cheesecake pan with Pam. If a crust is desired follow the crust recipe below.
Beat cream cheese , Stevia or Splenda and vanilla extract in your bowl until well blended. Beat in eggs on low one at a time. Gently fold in sour cream and pour into your cheesecake pan. Cook for one hour until firm. Turn off heat and leave in your oven for one hour. Cool to room temperature. Refrigerate overnight. Top with berries and sugar free whip cream.

Whats the serving size and net carb count on the cheesecake. with/without fruit?

I like the cheesecake better without crust, something about the difference in texture just doesn't appeal to me. If you want a crust however it's easy. Place a cup and a half of almonds in your food processor and grind them into a rough flour, toss in two eggs and 1/4 cup of Splenda. Hit the button again. Grease up your cheesecake pan well and dry cook in your oven at 350 for 15 minutes to set. Cook your crust while you make the filling. Pour the filling in and follow the cooking instructions. The carb count will be 4 per slice without fruit or crust, 6 per slice with fruit no crust 8 per slice with fruit and crust. You can lower the counts a bit if you use Xylitol as a sweetener instead of Splenda.

Awesome! I cant wait to try it. I was thinking about trying the crisp bread as a crust. I figure any sweet is better than no sweet.

GG actually has a product called GG Sprinkles, it's available from their site. It's the crispbread already crumbled up. I've used it as a crust and it works well too. Simply replace the nuts in the above recipe with the GG Sprinkles.

2 questions...
Do I have to use a cheesecake pan or would pie plate work?

Also, has anyone ever made mini cheesecake bites using mini muffin liners?

Hi Joanne! I have used cupcake liners they work great! I don't know about a pie plate because i have never tried it.Report back though if you use the pie plate please ;D

    zuiderdamm had listed that she used a pie pan for the coconut cream cheesecake, so I figured that instead of buying a cheesecake pan I would give it a try.
I have a couple of BBQ's to visit this weekend so I think I'll do a few plates of mini cheesecake bites with a bit of fresh strawberry & whipped cream on each
