If you're like me you miss your baked beans when you have a BBQ . Hard beans are where the plant stores its "sugars" AKA Carbs, and that's why hard beans are off the menu. BUT... you can replace those starchy hard beans with black soy beans and get that great shot of bean protein and flavor without the carbs! Here's my recipe for baked bans that will rival any you've ever had
The inspiration for this recipe came from the wonderful Cuban black bean recipes from the Florida Keys that I made for years with pork dishes.
LOW CARB Baked Beans!
Ingredients
2 cans Eden Organic Black Soy Beans
1/2 cup chopped onion
1/2 cup chopped green pepper
1/4 cup cooking sherry
1 tablespoon cumin
1 teaspoon cayenne pepper (more to taste)
2 teaspoons salt (more to taste)
1 tablespoon red wine vinegar
1 tablespoon oregano
1 tablespoon minced garlic
2 tablespoons olive oil
Directions
1- Heat olive oil over medium heat and saute' onions and pepper till wilted, leave in pot.
2- Add 1 can of drained beans to the veggies
3- Place the remaining ingredients a blender and puree
4- Add the puree to the pot and bring to a boil
5- Reduce the heat and cook down till thickened on the stove top or in a 350 degree oven then place in your smoker.
6- Stir in FAT TO SKINNY Low Carb BBQ Sauce to taste (recipe below)
Sweet n' Heat BBQ Sauce 1 1/2 net carbs per tablespoon
ingredients
1/2 bottle San-J Szechuan Gluten Free Hot & Spicy Marinade
an equal amount (5 ounces) Heinz reduced sugar ketchup
7 drops FAT TO SKINNY Zero Sweetener...then adjust to taste
Directions
1- (mix all in the San-J bottle and shake)
2- Baste all the food well as it goes onto the heat
3- During the last 10 minutes of cooking baste the food well once again
