I've made this a number of times in a cupcake pan and they came out great.
Would leave two out for the misses and I and freeze the rest.

Making it this way helps prevent eating too much at one time! ;)

Hi Buford    I would have guessed that it is where I am at (South Carolina...we love our peacan pies here  ;) ) because there are so many pecan trees around...LOL   but I believe it is San Saba, Texas that gets that honor.  

This is a really good recipe!!

Did I learn something over the last few days, beside being a
Fishin' Fool I am also a self taught Geek,
(I read a lot and like to build things like radios and puters)

So after a lot of research it seems that there are two(2) places
that claim the title of Pecan Capital

San Saba, Texas
Albany, Georgia

Georgia is number 1 in pecan tonnage, Texas is number 2

Be careful if you are using xylitol to sweeten Buford.  It is toxic to dogs if they get enough.   ;)

Thanks for the headsup, never gonna be a problem here only use
liquid sweeteners. Read about that stuff longtime ago and just never
ordered any for here.

We drive through georgia every year on our way back from bass fishin at Lake Martin.The pecan trees are amazing. ;) I too am a fishin fool Buford ;)

This recipe looks delish  :) but my tummy does not like Xylitol ~ Anyone know how I could make this using just liquid Stevia?  Perhaps it's not possible since it might need the bulk.   I made a cheesecake that was GREAT but I didn't like the way the Xylitol made me feel  :'(

yes Kim. i have been playing with liquid sucralose the last couple of weeks.( I am trying to come up with my own FTS brand) and I have yet to find a recipe I couldnt use it ;)

Here ya go guys! Pecan Pie! There's a recipe in Umpa's Bakery Book, too.

Crust:
1 1/2 cups unsweetened flaked coconut (or almond meal, depending on your taste) (12carbs-coconut or 18carbs-almond meal)
3 tablespoons butter
1/4 cup xylitol (optional)
Filling:
3 eggs (around 3 carbs)
1/4 cup xylitol
1 teaspoon vanilla extract
2 tablespoons melted butter
1 cup sugar free maple syrup (the thicker the better) (the brand I used was 4carbs)
1 1/2 cups pecans (around 4.5carbs)

Crust:
1. Adjust oven rack to middle position and preheat oven to 350 degrees F (165 degrees C)
1. Mix coconut and 3 tablespoons of butter or margarine together. Grease pie pan (I used baking Pam). Press mixture into an 8 or 9 inch pie pan.
2. Bake for 10-15 minutes, or until golden.

Filling:
Beat the eggs with the sweetener.
Add the vanilla, butter and syrup, then add the pecans.
Pour into the crust and bake at 350°F for about 35-45 minutes.
Let cool and slice into 8 pieces.

If sliced into 8 pieces, each slice will be about 3 carbs each.

Thank you Sarah. This too sounds delicious  :P I think I would use the coconut for the crust, I think it would be very flavorful ;D
