I Love New England clam chowder. I was raised on Cape Cod so we enjoyed it often. I developed this low carb version so the chowder is still very much in my life. I hope you enjoy this wonderful soup
LOW CARB New England Clam Chowder
Ingredients
2 cups chopped clams including juice
1 small onion diced
2 celery stalks diced
1 medium turnip peeled, cubed into 1/2 inch cubes.
1/4 cup bacon bits
1 1/2 cups heavy whipping cream at room temp
2 tablespoons salted butter
2 tablespoons fresh chopped chives
Salt and pepper to taste
Directions
1- Boil the turnip until soft
2- In a medium sauce pot melt the butter over medium heat and saute onion and celery
3- Add the clams, juice and turnip to the sauce pot and bring to a boil
4- Remove from heat and let rest 3 minutes
5- Add the cream and bacon, stir the soup should be at a perfect eating temp now. If you choose to heat it up further do not bring to boil or the cream will curdle.
6- Ladle into bowls and sprinkle the chives on top
