Low Carb Savory Chicken Vegetale

I made this last night and it was wonderful, been on a chicken kick! I named it Chicken Vegetale "Vegetale" is Italian for vegetable This is an easy meal to make I hope you enjoy the recipe.

Low Carb Savory Chicken Vegetale



Ingredients

Whole chicken cut into pieces
Large onion rough chopped
Large red bell pepper rough chopped
6 baby eggplants rough chopped
1/3rd cup extra virgin olive oil plus 3 tablespoons
2 cups shredded kale
¼ cup Italian seasoning
Salt and pepper to taste
3/4 cup shredded Mozzarella cheese

Directions

1- Preheat oven to 350 degrees
2- In a large bowl mix all the ingredients
3- Heat a large oven proof skillet over medium high heat and add the 3 tablespoons of olive oil
4- Pan fry the legs and thighs till golden brown but not cooked through (they take longer to cook, this gets them caught up)
5- Place the legs and thighs back into the bowl and mix everything up
6- Place all the ingredients into the skillet and roast in the oven for 35 minutes or until the chicken is cooked through.
7- Remove from oven and sprinkle the cheese over the top, place back in oven for 5 minutes to melt cheese
