I love Avocado especially the large green Florida strain. Creamy and delicious these magic fruit are so good for you.
Wonderful Low Carb Italian Relish Avocado
Ingredients
1/2 Avocado seed removed
1/4 cup chopped fresh tomato
5 olives of your choice
1/4 cup chopped cucumber
1 tablespoon chopped purple onion
1/2 teaspoon Italian seasoning
2 tablespoons sour cream
1 tablespoon lime or lemon juice
1 tablespoon extra virgin olive oil
cracked black pepper
salt to taste
Directions
1- Mix the tomato, cucumber, onion, Italian seasoning and olives in a bowl and salt to your preference.
2- Pour the lemon or lime juice into the cavity of the Avocado and brush the top surfaces.
3- Salt the Avocado then fill with your relish
4- Sprinkle the remaining relish around the fruit on the plate.
5- Drizzle the olive oil over the fruit and relish, add more if needed.
6- Top the relish with sour cream and garnish.
7- Generously crack black pepper over the entire plate
