Low Carb Green Bean Antipasto

Hi all :) We got tons of pole beans from our plants this year prompting new and exciting recipe ideas. I picked 6 cups of beans this morning and viola! This wonderful green bean antipasto came out of the kitchen. Rich in flavor and pretty on the table this salad is sure to please you and your family. I hope you enjoy the recipe!

Low Carb Green Bean Antipasto



Ingredients and Directions

Mix all the following together and plate!

4 cups snapped, strung and steamed green beans ( any kind will work )
1/2 cup chopped purple onion
1/2 cup mixed olives
1/3rd cup julianne Soppressata or other good dry Italian salami.
1/4 cup chopped provolone cheese.
2 tablespoons shredded Parmesan or Romano cheese.
1/4 cup extra virgin olive oil
1 tablespoon lemon juice
salt and cracked black pepper to taste
