Fall Pancakes

Made pancakes for Mary today, here is what I threw together-



Makes 8 4" pancakes
Serves 2

5 tbs almond meal
1 tsp baking powder
1 tsp cinnamon
1/2 tsp nutmeg
2 eggs
1 tsp vanilla
3 drops zero sweet
3 tiny spoons Trader Joes Stevia (or equiv)
1 tbs cream (opt)
oil for cooking

Mix dry ingredients in a bowl. Set aside and mix wet ingredients (except cream) in another bowl. Add wet to dry and mix. I use a whisk. If it's too thick, add the cream. Like any pancakes, they are ready to flip when edges are dry and there are tiny holes showing up on pancake. I made 4" pancakes.

I might add your eggs and bacon on the side  & eat only 4 to keep the carbs low.

Yes, but it pops out cinnamon & nutmeg flavor. This recipe should be altered to sweetness taste. I used only 3 of each yesterday & it was perfect, so I changed it. Thanks Umpa.

I just made pumpkin muffins and pumpkin custard.Soon as I have time I will post recipes ;) I also made a broccoli cheddar soup with coconut milk. Doug will be home soon and I will have time to post :D

Wonderful to use coconut milk. We found out that Mary might might have an allergy to milk like her great grand mother did. Her older sister is lactose intolerant. So taking her off dairy for a while & will see if her symptoms go away. She has the runny nose, hives etc. Doctor said her test results show low tolerance to dairy, so we'll give a try. She doesn't like cheese so that helps.
Trader Joe's sells unsweetened full fat coconut milk for $2.99! Also Unsweetened vanilla and regular almond milk for same price.

She loving what I make with these milks!

Thats all I use anymore is coconut and almond milk.I saw a youtube video on how to make your own but it seems like alot of work.I do plan on making my own Ricotta and Mozzerella this winter though Susie. :)

Susie, I cannot believe how industrious you are. Really - making your own ricotta and mozzarella - wow.

It amazes me how so many people have food allergies and has got me wondering how they occur. Is it something caused by chemicals /ingredients that manufacturers have put in our foods that have triggered our auto immune systems? May have to do a little research.  I mean - for example - how many people have serious nut allergies?  Surely it wasn't that common say 20 or 50 years ago. Something has got to have triggered it.  Our ancestors supposedly went through a nut/berry stage - that would have killed off a lot of the population if nut allergies abounded. Or was our DNA screwed up somehow?

Sorry - got sidetracked.  Does Mary cook Susie? She's lucky you try all these new things for her.

I will have to feed her ketogenic now, without dairy foods. Similar to FTS thankfully. I'm trying to keep her macros at 20g carbs (should be mostly veggies), 66g protein and 127g healthy fats. After holidays will whittle down the sweets and increase veggies for carbs. We are eating like this on some days already.

Made coconut flour pancakes, topped with Kerry gold butter, wow, wow, wow was so good with sugar-free syrup. The syrup did not agree with my tummy, it went right through me, so next time will just make bacon pancake sandwiches, lol. Doesn't bother Mary at all, but will reducing her sugar alcohol if her ketone levels are not good. I'm feeling so much better eating just veggies, a few raw nuts, butter, coconut oil, olive oil, chicken & beef, almond & coconut milks, and my Guayaki Yerba Mate teas.

do you use the coconut flour by itself or are you mixing it with almond? :)

Made the coconut flour pancakes with only coconut flour. I add almond meal if I have it, and I add flax meal sometimes too, but that works best with cinnamon or pumpkin recipes. I get Bob's 16-oz golden flax meal at Big Lots for $4.
