Low Carb Southwestern Spicy Ribs with Caulirice
Servings- 2
Ingredients
4 large country style pork ribs
2 cups low sugar hot salsa (use only 1/2 cup from pot over ribs when serving) (8 net carbs)
2 cups of caulirice from page 423 (6 net carbs)
1 tablespoon salted butter
2 tablespoons chopped Cilantro
Salt and pepper to taste
Directions
1. Preheat your oven to 325 degrees.
2. Place the ribs side by side in a baking dish.
3. Pour the salsa over the top of the ribs and cover the baking dish with foil.
4. Place the ribs into the oven and cook for 1 1/2 hours or until ribs are so tender they break apart with a fork.
5. Remove the ribs from the oven and let rest on counter.
6. Melt the butter in a non stick skillet over medium heat.
7. Toss in the raw caulirice and stir fry in the butter till heated through.
8. Mix in the cilantro and salt and pepper to taste.
9. Plate the caulirice and ribs.
10. Ladle 1/4 cup salsa from the baking dish per serving over the ribs and serve.
TIP- Use medium salsa for a less spicy result. Salsa is high in carbs, even though you use 2 cups to cook the ribs in only serve a small amount from the pot over the ribs.
