You are correct that heavy cream (without additives) has 0 carbs.
Umpa mentioned the following in another post of yours...
There are many things the so-called "experts" have taught us about losing weight that is not true.
Digestible carbs turn into blood glucose VERY fast.
Because there is so much glucose so quickly, our bodies cannot burn it. So they store it as fat.
Fats and protein digest much slower and therefore are processed into glucose much slower.
With that, our bodies have a better opportunity to process them without fat storage.
One caveat...
Our metabolisms perform a process that will take 0 carb foods and generate blood glucose.
This process is called gluconeogenesis.
For that reason, it is important that we monitor our portions.
We should only eat what our bodies need for fuel, and no more.
When we eat too much of zero or low carb foods, we will gain weight.
